Some of our favorite canneries:

Alalunga

Micro producer since 2018, has elevated the tinned fish game to an even higher level. Both in flavor and sustainability (i.e. traceable tins). They source at the Cantabrian Sea.

Nuri

Family run and artisanal since the 1920's in Portugal. They only do a few things and they do them really well. Including their secret tomato sauce, hand-made by Portuguese grandmas.

Angelo Parodi

Dating back to 1888, Parodi is a legendary cannery based in Genova, Italy, a pioneer of modern canning. They source fish from the Mediterranean and Atlantic coast.

Les Mouettes d'Arvor

For 40 years this Brittany-based cannery has sourced their sardines from within five miles. Then handcrafted, seasoned and cooked in EVOO.

José Gourmet

One of the newer canneries, JG celebrates the purity of quality ingredients, fair trade, sustainable fishing and a contemporary sensibility.

Ramón Peña

Since 1920 harvesting by hand at the estuaries of Rías Baixas in Galicia, they preserve with extreme care as to present their tins to the special delicacies that they are.

The Tins began

one evening with friends in Lisbon, at a dinner where only tinned fish were served.

We had no idea what we were about to experience: The flavor, freshness, and exceptional quality were not how we understood tinned fish to be.

On that trip, we didn’t know much about tinned fish, but we knew that back home, the city where you could eat the world, you couldn’t eat like this.

Over the next year, we tried every tin we could get our hands on and selected the greatest ones to present to you – The tins whose fish seemed to glow like little gold bars, so fresh they could jump back into the ocean.

Starting in 2021, we’ve been presenting a menu to surprise and delight you like we were that night.

Meet The Tins:

  • G Giraldo

    Former Special Projects Editor at La Cucina Italiana magazine. G has found home in kitchens, bars, and restaurants in Florence and New York including Blue Ribbon Brooklyn and Frescobaldi Wine Bar Firenze. A native son of Queens, with strong Colombian roots.

  • Marcio Kelmanson

    Creative Director for brands like St Regis, Volvo, Verizon, Target and others. Native of Rio by way of London, His only regret in life is never having eaten a sardine before the age of 41. Proud dad of Valentina.
